buckwheat flour
Buckwheat is one of the so-called pseudocereals (like amaranth or quinoa), has absolutely nothing to do with wheat, and is naturally completely gluten-free. It contains a lot of protein and starch and is sold as whole grain, groats, semolina, or flour. Amaranth
