Our recipe for lemon cake
This recipe, made with our gluten-free flour, is a classic, reduced-sugar pound cake recipe that can be varied in many ways. You'll find tips below.
The dough quantity is calculated for a 500 ml loaf pan.
Ingredients: 100 g butter, room temperature // 80 g sugar
1 pinch of salt // zest of an organic lemon // 2 medium eggs, room temperature
100 g Isabella's gluten-free cake flour // 5 g baking powder
For the casting:
70 g powdered sugar // 15 g lemon juice
preparation
Preheat oven to 200°C fan.
Beat the butter with sugar, salt, and lemon zest until light and fluffy. Then add the first egg and continue beating until well combined. Stir in the second egg in the same way. Sift Isabella's gluten-free flour over the dough and mix briefly but thoroughly with the other ingredients.
Pour the batter into the greased baking pan (paper baking pans do not need to be greased), pour in the batter, smooth it out and bake immediately as follows:
Place the baking pan in the preheated oven and bake at 200°C for 12 minutes. Then, using a knife dipped in oil or water, cut a 3 cm deep cut into the cake lengthwise. Reduce the temperature to 160°C and bake for another 20 minutes. Remove the cake from the oven and let it cool in the pan. Mix the powdered sugar and lemon juice, remove the cake from the pan, and spread the icing on top.
Tips for variations
Orange cake: replace the lemon ingredients with the same amount of orange ingredients
Almond cake: Replace 40 g of the flour with ground almonds, replace lemon zest with almond flavoring, and use Amaretto or water for the icing.
Chocolate cake: Replace 25 g of the flour with baking cocoa, add 2 tablespoons of chocolate drops if desired, and cover with chocolate coating.
