Isabella's gluten-free chocolate cake is one of our absolute classics! Made with a delicious sponge cake with ground hazelnuts, it's super flavorful, wonderfully moist, and yet not too heavy, without any icing or filling. Isabella completely avoided flour and refined sugar in this cake, but she didn't skimp on whole chocolate chips. Doesn't that sound too good to be true?

hazelnut
Hazelnuts are a culinary essential: They're perfect for cakes, pastries, or as a topping, and are available whole, shelled, chopped, or sliced. In addition to their delicious flavor, these small nuts are a real energy boost. Despite their high calorie content, they're actually quite healthy and packed with fat, protein, vitamins, fiber, as well as magnesium, zinc, calcium, iron, and selenium.
Erythritol
Like birch sugar and isomalt, erythritol is a sugar substitute and is therefore an excellent sugar substitute for baking and cooking. Its sweetening power is about 70% compared to regular table sugar, so a slightly higher dosage is required. Since erythritol has no effect on blood sugar or insulin levels, even diabetics can use this calorie-free substitute without any problems.
Rapeseed oil
Rapeseed oil is the most purchased oil in Germany, ahead of sunflower and olive oil. And not without reason, as it boasts a variety of positive properties. Rapeseed oil is the cooking oil with the lowest saturated fatty acid content. Furthermore, rapeseed oil has a good omega-6 content and is a comparatively good source of omega-3. Incidentally, rapeseed is a plant species in the genus Cabbage within the Cruciferous family.
Birch sugar
Birch sugar, also known as xylitol, is considered a sugar substitute, an alternative to table sugar. Originally made from birch bark, it is now also made from corn cob scraps, straw, or grain bran. Xylitol is very similar to table sugar: It tastes just as sweet and has a similar consistency. Birch sugar has little effect on blood sugar levels, making it suitable for diabetics.
